1. Long handle. lf the pan is over 30cm diameter (often a stir wok), then a smaller helper-handle will be attached on the oppositeside. The large handle facilitates flipping, while the short handle makes it easy to lift.

According to EN 12983-1:2023 7.2 Selection of handles ” All cookware with a capacity exceeding 3.75 litres or a total weight of 5 kg when filled with water must be fitted with two handles.” A dual‑handle design, with one handle on each side, is particularly suitable for large woks, paella pans and braisers, as the volume and weight of the contents would make single‑handle lifting impractical and unsafe.
