I recently purchased a 12″ carbon steel pan and have had nothing but problems with it. Food sticks to it. And now I feel like I have had to scrub it so much to take the food off that the pan is ruined. I posted on this website before and never heard back from anyone. Dear Carlos, we are sorry to read about your problems, but please note that a Lotus Rock pan does have non-stick properties, they are just different to those that are commonly used in most other non-stick pans, such as with a PTFE coating.
