The most common problem with a baking sheet is warping due to its long length. A Lotus Rock Baking Sheet is made of heavy gauge steel, which can withstand frequent, daiily use and still be highly resistant to deformation.
A simple ruler test can be done to judge the concavity of the baking sheet. Turn the pan over and set the ruler on top. Normally, if another ruler can be placed underneath, while at the same time touching the ruler above it, then the concavity is about correct.
